I made a rub out of olive oil, a drop of apple-cider vinegar, dried sage, and dried rosemary powder. My mother rubbed the chicken with salt, pepper and my rub. Then, we stuffed the chicken with one peeled, small onion; one peeled shallot; and one head of garlic, chopped in half. We then secured the legs together to keep the aromas/acids inside the bird. Then--into the oven it went in a 375 degree convection oven for a little over an hour.
Mom made a MAGNIFICENT salad to go with the bird, and strawberries were on sale at the market, so we had those luscious babies present, as well. Brie and I made an Irish soda-bread in a loaf pan that turned out beautiful, and complimented the chicken to perfection. The verbs and adjectives I'm using hint at how absolutely stoked I am over this meal!!!
So, our meal was lovely..and we had time to play a couple rounds of Uno afterwards! The losers (Brie and Dad) from last week quickly dominated. Dad won his first round ever, pulling out a first place while I actually only had one left, too. After, Brie had a very classy victory with two red cards: a reverse (giving her an extra turn), which led to her win. We were all impressed. :)
Now the family is (sort of) watching the Australian Open. Mom is dozing on the edge of the couch as Dad is avidly watching the TV. Brie is fidgeting by my side, and I'm, well, typing this. No school tomorrow due to Martin Luther King Day! And the snow keeps softly falling...
