So anyway: Here's the recipe::
My Peanut Butter Yummies (yield three batches)
3 eggs
1 cup of white sugar
2 cups (+ a little bit more for love) brown sugar
2 and 1/2 cups of organic peanut butter
powdered sugar
Hershey Kisses-flavor of your choice. I used white chocolate.
1. dump everything into a nice, big 'ole bowl. I used plastic
2. Take your heavy duty mixer and... charge! Mine started to smoke because of the thickness of the batter. You could try using a Kitchen Aid mixer if you have one, but I don't so I don't really know how that would turn out.
3. The dough should be completely, irrationally and annoyingly sticky
4. With a small spoon, scoop a ball, roll it in a bowl of powdered sugar and form a ball.
5. Place it on an UNgreased baking sheet
6. Repeat
7. Oh, by this point you should have your oven pre-heating. Our convection oven is like Super Oven, so I set mine at 340 degrees. 350 on yours? You make the call..
8. After filling a baking sheet, pop it in the oven for about 6 to 7 minutes--that's when I'd check. You really don't want to over bake them. It's helpful if you're working with someone like Denise who is like the All-Knowing Magical Goddess of Finished Baked Goods. Pretty much use your best judgment, or find someone who has some. As far as Denise goes, if I had her skills I'd charge $25/minute of baking time. :D
9. When they're done, take them out of the oven and let them stand for a minute or two. Then, take those Hershey's and plop 'em on. If the cookies are too hot, the Hershey's might melt a little, but that can be yummy, too. It's all about preference.
10. You'll probably have more batter than what can fit on one sheet, so keep the baking ball a-rollin'.
11. Eat one.
12. or two.
13. or.... "Brie-don't spoil your dinner!"
14. Enjoyyyyy
It was fun! Mom, Brie and I are hoping for another snow day soon, preferably on a Thursday, so we can do some more intense baking. Either way, there is some mega oven action planned for next week: A Christmas menu with informed side notes is promised. Until then, try them cookies, girl*! Yum Yum Um Um Ummmm
* or boy. But I'm not really sure if a male audience exists (yet)....
