Dinner of the Day: Old Salmon Favorite







Mom used to make salmon almost every Sunday night. She made it so often that Dad was always commenting, "So I guess it's Sunday night Salmon again". We weren't sure if he thought it was a bad thing. The past couple months Mom hasn't been making salmon at all since Price Chopper doesn't sell the right kind. But the past couple weeks Dad's been questioning, "What happened to the salmon dinners?!" So this week Mom stopped at Clark's IGA and picked up the fish--just for Daddy-kins. It was a nice dinner with a lovely salad and some Spanish yellow rice. Brie and I made a upside-down fudge cake for Dad--Mom's suggestion, which we acted upon. Dad was apprehensive while we were first serving it, since it didn't have a conventional name like "cookies" or "brownies". However, I warmed it up so the fudge was all melty, and I put Ben and Jerry's New York Super Fudge Chunk (their BEST FLAVOR EVER) on top, and it passed as "pretty good" by Dad (which is a decent review, coming from him). Now, the girls are headed off to bed since it's a school night (including Macho Mom), while Papa Joe lingers downstairs watching the Grammies. Adele just won Best New Artist--yay! "Chasing Pavements" is such a good song. Anyways, the week in weather looks like Tuesday brings some showers, but Wednesday is coming with a high of 40 degrees! Oh joy! Which is better than below zero, although my bones are perpetually frozen anyway....

I am glad your Dad is eating HEALTHY these days! I remember when it was "Pizza Hut MEAT LOVER's Priazzo SUNDAYS" back in the day. And he could polish an entire Large one and then have dessert also. The sweet tooth hasn't gone away, which is good. He needs the energy for the tennis courts!!
