Just the two of Us!

Since Thursday, it's just been Daddy and I in the new apartment. Mom and Brie returned to the green mountain state for Brie's orthodontist appointment and to wrap up some lose ends from our old house since it's going on the market.

Saturday night was much anticipated after ANOTHER busy week. Dad went to the office during the day to try and catch up on the over-load of work. I unpacked more boxes during the day and spent a lot of time outside since the rain was taking a break and the day was sunny and humid. But dinner was nice for us to unwind, relax, and spend time together. I made some yummy things! I baked salmon with sliced tomato and baby portabellas, topped with a sauce made of olive oil, white wine vinegar, red wine, garlic, fresh oregano, crumbled blue cheese, salt and pepper. Then I poached some green beans. For the starch of the evening, I took prepared pizza dough and made small rounds and grilled them on the George Foreman. Then I topped them with FRESH mozzarella (on sale!) and more of the blue cheese. Popped them under the broiler for a couple minutes until golden and bubbly and delicious! It was a fun dinner to make.

This morning, to treat my spoiled father even MORE, I made freshly baked blueberry muffins with fresh blueberries. He expressed his apprehension of gaining weight after all the treats I make.
