Happy 2009

I can't believe it's a new year already. It seems like it was just yesterday that I was talking to my old friend Tatum, in 6th grade, trying to convince her it was 2004, because she was confused and believed it was 2005! The beginning of 2009 has already brought some exciting things: A George Foreman grill/panini/waffle-maker that the family recieved for Christmas. Us girls have been using it for almost all of our meals (I've been wishing for a waffle-maker ALL year!!!) We've had waffles twice--nice big and fuffy belgium waffles! Hint: To make your waffles extra fluffy, when adding the eggs to the waffle-mix, separate them first, beat in the yolks, beat the whites SEPERATELY until they form peaks, then delicately fold them into the batter. :) Back to the George Foreman machine--We've been grilling all our meats and vegitables, and paninis have become the new fad for lunch! Other exciting news includes Sabrina and my reconnecting with family members, on bother our Dad and Mom's sides. It's a shame that we haven't had stronger communication with our extended family in the past, but hopefully that will change :)The Cofer girls (and Dad) wish you all good luck for 2009 :)
